It’s summer now! Suffer from the scorching heatwave temperature? How about “cooling” ourselves by cooling our taste buds?

All the delicacies we share today, are the most common and popular cold dishes in China, especially in Sichuan!

Liangpi

Liangpi, also called Cold Skin Noodles, is usually made from wheat flour or rice flour. Do not be horrified because of the word “skin” in its name. In Chinese, the word “Liangpi” means “cold skin”. They are wide and flat noodles, and are always served cold with cucumbers, cilantro, bean sprouts and spicy chili oil sauce.

Liangfen

Similarly, there is another type of popular spicy cold dish. Liangfen, also called Chinese Jelly Noodles, is a type of cold dish especially popular in western part of China, especially in Sichuan. The materials mainly include starch, pea starch, sweet potato starch or mung bean starch. They are crystal, smooth and cool.

What needs to be mentioned is a special kind of Liangfen in Sichuan. It has many names, Beichuan Liangfen, Shangxin Liangfen, Sad jelly noodles, or you can directly call it Heart breaking jelly noodles.

The dish is featured by its spicy flavour. If you are sad or heart breaking, go and taste it, then your sadness will disappear soon since it is too spicy so that all you feel is SPICY. And that’s how it got the special name.

Cold noodles

In case you want to get more carbs, a portion of the cold noodles is strongly recommended. Cold noodles, also called liangmian, is super common at home in summer. The Sichuan-style Liangmian is particularly refreshing in hot summer. It can easily be doubled up for a family buffet too! You can add whatever toppings you like, and it’s very suitable for vegans!
